Nestled in the heart of Greeley, Colorado, Pellegrini Cucina Italiana is more than just a restaurant - it’s a celebration of authentic Italian heritage and the flavors of time-honored culinary traditions.

Puglia, often called “the heel of Italy’s boot,” is renowned for its iconic “white” stone houses, called trulli, centuries-old olive groves producing some of Italy’s finest quality oil, and simple, flavorful cuisine showcasing the richness of it’s agricultural and seafaring bounty. Carlo Pellegrini is a native of the region from a town called Bisceglie. Bisceglie means “cherries” in the Puglian dialect since the area’s farmland produces high quality black cherries much sought after in Italian food markets. Of equal import is Bisceglie’s coastal location that provides a daily smorgasbord of fresh fish and seafood. Carlo grew up in the culinary traditions of his family and his aunt’s famed port-side restaurant, Il Trabucco where “pepate di cozze” and “orecchiette con cima di rapa” were a staple.

Carlo and Jessica met in Milano where they began their story and eventually came back to Jessica’s hometown and opened their first small restaurant, “O’Sole Mio Trattoria Italiana. In 2012, Pellegrini Ristorante Italiano opened in Greeley but unfortunately experienced a fire in 2019 that shuttered the restaurant operation until 2022.

Pellegrini Cucina Italiana celebrates the past and embarks on the future, celebrating the authentic and time-honored traditions of Carlo’s culinary heritage while inviting guests to experience a fuller range of Italy’s beloved gastronomy. Pellegrini offers a unforgettable dining experience where the cozy interior propels the diner on a journey to southern coast of Italy with flavors characteristic of the region.
